Total phenolic content, antioxidant activity, shelf‐life and reconstitutability of okra seeds powder: influence of milling and sieving processes

Summary This study aimed at relating phytochemical properties (total phenolic content and antioxidant activity), reconstitutability (water absorption capacity water solubility index) preservation ability activity) of okra seed powders to physicochemical (particle size distribution moisture content). Okra were produced three different milling frequencies, then, each obtained sample was sieved with 180, 315 500 μm sieves. An increased frequency resulted in lower median particle size, activity content. The maximal 0.583 ± 0.010 12.07 0.05% (w/w), respectively, showing the good powders. Total raised higher frequency. Reconstitutability significantly enhanced and/or for smaller size. Thus, successive sieving process successful improving functional powders, especially particles.
